This activity involves preserving fruits and vegetables by means other than those in certain pre-defined groups. It includes making foods where fruits or vegetables are the main ingredient (except frozen or canned ready meals), producing perishable items like fruit or vegetable salads, processing and preserving soybeans and legumes into products such as natto, yuba, fu zhu, douchi, and varieties of tempeh other than standard tofu and tempeh, and roasting nuts and legumes like peas, salted peanuts, coated peanuts, cashew nuts, and peanut-based snacks. The manufacture of processed vegetable foods is excluded and falls under a separate classification.
