This class covers the processing and preservation of meat through methods such as canning, smoking, salting, freezing, sweetening, and irradiation. It includes producing frozen meat as carcasses, cuts, or individual portions, as well as dried, salted, or smoked meat, and processed meat products like sausages, salami, pâtés, rillettes, meatballs, and ham. Whale meat processing on land or on special ships is also covered, but it excludes ready-to-eat meat and poultry meals and meat-containing soups (see groups 10750 and 10799).
